Equagold Gold Grade Leaf gelatine is the gelatine of choice for most
professional chefs because it sets clearer and with a much smoother consistency
than powdered gelatine. It imparts none of its own flavour into the dish which
is a concern in a professional kitchen with powdered gelatine. These Gold Grade
Gelatine leaves give a very smooth mouth feel, and are very easy to use.
Approximately 4 Leaves is equivalent to 15g of powdered Gelatine. To prepare
leaf gelatine, soak it in cold water for 4-5 minutes, allowing it to swell.
Remove the swollen leaf gelatine from the water and gently squeeze it out. When
using in warm dishes add the squeezed out gelatine directly into the warm liquid
and stir until it has completely dissolved. Never add gelatine to boiling liquid
as this will impair its setting qualities.
