Highly prized, Porcini is commercially sold fresh in autumn in Europe but is also dried and distributed worldwide. It is described as nutty and slightly meaty, with a smooth, creamy texture. This mushroom has a distinct aroma reminiscent of sourdough. This 50gm bag is sufficient to make a Porcini Risotto for 8-16 people/servings. To use, coarsely chop or crush the dry Porcini, then soak for 20-30 minutes in 200ml boiled water. Remove and set aside. Use the remaining liquid as part of the stock for the risotto. Add the Porcini to the risotto 2-5 minutes after initially adding the stock. Store in an airtight container, or a cool, dry, place.
