Sweet and liquoricey are words not often used to describe garlic. Nor are palatable, non-stinky and a snack option. However, black garlic is entirely different! You can even eat black garlic by itself. It does not stimulate stomach in a way a raw garlic does. Black garlic has gained popularity in Japan after a research showing its health benefits was published in 2006. Black garlic is a type of aged garlic which is attributed to be browned by the Maillard reaction rather than caramelized, first used as a food ingredient in Asian cuisine. It is made by heating whole bulbs of garlic (Allium sativum) over the course of several weeks, a process that results in black cloves. This 'garlic noir' is only sold in the best foodie stores around New Zealand.
